The poor man's vegetable



It’s been freezing over the past couple weeks, so potatoes have somehow become my primary food source. Contrary to what atkins dieters have been brainwashed to think, potatoes are actually a great source of fiber and nutrition (not to mention cheap)! In tribute to my love of potatoes I decided to cook up a very hearty potato leek soup!

Potato Leek Soup

Found Ingredients:
2 Potatoes
1-2 Leeks
1 Onion
2 Garlic Cloves
4 Bay Leaves
Parsely Bunch
3 Carrots – Chopped
2 Celery Stalks – Chopped
4 Chicken Tenderloins
6 Cups Water (Can be substituted w/ chicken stock - for those who can afford these luxuries)

Carrots are the new spaghetti...



…when you’re on a budget!

I had a craving for some sort of pasta dish last night, but realized we were out of pasta. Instead of running to the store (like old me would do), I had to be creative and “make do” with what I had. In the end it all worked out, a low carb & low calorie meal! Not bad for carrots disguised as noodles.



I call this Oodles of Carrot-Noodles

Found Ingredients:
3 Whole carrots (peeled)
1 Apple
2 Celery Stalks
Sesame Dressing or equivalent (I happened to have a delicious sesame dressing)
“Dress it up” with some Chicken or Tuna

What's that smell?



Some funky smells have been festering in our fridge lately. Under normal circumstances I would have used baking soda, but in this economy, thats 99 cents too much. So I decided to try a home remedy I saw on Tyra a while back. Apparently wet crumpled newspaper works just as well as baking soda to absorb nasty odors. I will give this a try and let you know how it goes! In the meantime I’ve left little presents in the fridge.

The start of my life, on a budget

It’s really starting to hit home now, seeing the people around me lose their jobs. Most mornings I wake up grateful - that I have a job and paranoid at the same time - that I can easily lose it. I wouldn’t say that I live a horribly lavish life, but there are things I can certainly do to cost reduce. Today I'm starting my journey into a budget concious lifestyle!
